So our next breakfast adventure are these delicious antioxidant rich breakfast bars. I made a double recipe of this to refrigerate and be breakfast for several days over the rest of this week and weekend.
Antioxidant-rich Breakfast Bars
1 medium ripe banana
1 cup old fashioned oats
1 cup frozen blueberries, thawed
1/4 cup raisins
1/8 cup pomegranate juice
2 tablespoons finely chopped dates
1 tablespoon chopped walnuts
1 tablespoons Goji berries
1 tablespoon raw sunflower seeds
2 tablespoons ground flax seed
Preheat oven to 350 degrees. Mash banana in a large mixing bowl. Add remaining ingredients and mix thoroughly. Lightly wipe an 8×8 baking pan with a small amount of olive oil. Spread mixture into pan. Bake for 25 minutes. Cool on wire rack and cut into bars. Refrigerate any leftovers.
Since I doubled the recipe I baked them in a 9×13 baking dish instead of 8×8. It still worked just fine, though I’d up the baking time to 30 minutes instead of 25.
